New Home….New Baby…..

It has been a whirlwind to say the least. A few months back, we packed up our bags to move out of the Windy City to a small town of only 1400 people. Meanwhile, we are renovating our (new) old farmhouse and welcoming a healthy baby boy into the pack.

There are only a few more months of school left…..thank goodness! I am trying to keep up with some new, healthy, and edible lunch options for my oldest. I like to spice things up!

We do have to keep his lunch nut free (even though no one in the class has a nut allergy) and I personally like to make sure we lay off as much sugar as possible. Thinking about it, I should probably get a personal Thank You note from his teachers for that consideration! 🙂

Healthy, Easy, & Thrifty School Lunch Options

My oldest will be six next month….dear lord. He’s been in kindergarten for the past five months and has an amazing dad who packs his lunch everyday! Packing can be a big pain, so I wanted to share some of our healthy, easy, and thrifty school lunch options.

As a kid, I always bought my school lunch (packing was really unheard of in my house) but my husband packed his (himself). We did not have to worry about peanut allergies back then and I think I had a brownie (or two) everyday. 

Obviously that was years ago and things are a bit different. We now understand that much of the crap put into our foods are filled with sugar, GMOs, pesticides, etc.  Continue Reading…

All Natural Pumpkin Caramels

If you know me, you know that I love fall and I ABSOFREAKINLUTELY love Pumpkin!!! I also love desserts just as much (probably even more). That is why these all-natural pumpkin caramels are my new fav!

I am constantly on the lookout for healthy desserts. The less sugar the better. That is why dates are one of my favorite foods! I like to think of them as nature’s candy. 

Dates are full of fiber, iron, potassium, and B-vitamins. They also contain vitamins A, K, and the list goes on. They provide many health benefits including protecting cells from free radicals, helping to prevent stroke, coronary heart disease and the development of cancers. 

Obviously, keep in mind that you should have everything in moderation. Too many dates can provide your body with too much fructose.  Continue Reading…
